Courgette salad

This is one of those salads in which the quantities of the ingredients are entirely your choice as well as the seasoning or the addition of a vinegar to the dressing.

Serves four:

  • 4 medium Romanesco courgettes, washed and thinly sliced (using a mandoline makes the process very easy) 
  • 2 medium tomatoes, cut in 6-8 pieces
  • a small handful of sun dried tomatoes (pre soaked in water or olive oil into dry), chopped into smaller pieces
  • a small bunch of rocket salad
  • fresh mint or basil leaves, torn
  • salt (preferably Maldon)
  • olive oil
  • a couple of tablespoons of lemon juice for the seasoning
  • shaved parmesan to your liking

Mix the first five ingredients together in a bowl.

Now pour in some olive oil, drizzle on some lemon juice and sprinkle some salt on top. Toss all the ingredients until well coated with the dressing. Taste and adjust the seasoning if needed. 

*You could also add some of your favourite vinegar if preferred.

Now arrange some shaved parmesan on top and the salad is complete.
