A good drizzle of a local fragrant olive oil and a toasted<span class=\"Apple-converted-space\">\u00a0 <\/span>typical bread, <em>Pane di Altamura<\/em>, is a match made in heaven. I like to cook it a day earlier allowing the flavours to mature over time.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Use a mixture of the below dry pulses and grains:<\/span><\/p>\n<ul>\n<li class=\"p1\"><span class=\"s1\">broad beans <\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">peas<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">chickpeas<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\"><em>cicerchie<\/em> known as grass pea or chickling vetch<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">lentils<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">white beans<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">durum wheat <\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">spelt<\/span><\/li>\n<\/ul>\n<p class=\"p1\"><strong><span class=\"s1\">For 4 portions:<\/span><\/strong><\/p>\n<ul>\n<li class=\"p1\"><span class=\"s1\">300 g of the above pulse mix (left to soak in cold water overnight)<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">1-2 carrots, chopped<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">1 small onion, chopped<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">1 celery stick, chopped<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">1 clove of garlic, peeled <\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">1 potato, peeled and cut into small chunks<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">1-2 bay leaves (optional)<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">salt<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">water<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">olive oil for frying<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">1 tomato or 1 flat tablespoon of a tomato pure <\/span><\/li>\n<\/ul>\n<p class=\"p1\"><span class=\"s1\">Drain the pre-soaked pulses and grains.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Heat up in a pot on a medium heat 2-3 tablespoons of olive oil.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Add the chopped onion, celery and carrots. Fry for about 5 minutes, add the garlic and carry on frying until the vegetables soften a little.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Now add the drained pulse mix, quartered tomato or tomato pure and cover with just enough water.<span class=\"Apple-converted-space\">\u00a0 <\/span>The level of water should be about 2-3 cm above the ingredients.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Put the lid on, bring to the boil and then simmer on a low heat (add the bay leaf if using). <\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">After 20 minutes add the potato to the soup and season it with some salt, give everything a stir<span class=\"Apple-converted-space\">\u00a0 <\/span>and carry on cooking for further 40 minutes or so, until all the ingredients turn soft. <\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Switch the heat off and taste the <em>crapiata<\/em>, season with more salt if needed and let it rest.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Serve the soup warm with a generous drizzle of a fragrant olive oil (preferably from Matera) and a toasted bread (made of semola if available).<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>La Crapiata Materana, a nourishing and hearty soup, traditionally connected to the territory of the region of Basilicata.
