It pairs extremely well with pan fried or grilled fish, or with cold cuts of meat. Use any concoction of herbs, depending on your taste and availability.<\/span><\/p>\n<p class=\"p1\"><strong><span class=\"s1\">Serves 4 :<\/span><\/strong><\/p>\n<ul>\n<li class=\"p1\"><span class=\"s1\">500-600 g of baby potatoes, washed<\/span><\/li>\n<\/ul>\n<p class=\"p1\"><strong><span class=\"s1\">For the sauce:<\/span><\/strong><\/p>\n<ul>\n<li class=\"p1\"><span class=\"s1\">70 g of cr\u00e8me fra\u00eeche<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">25 g of Dijon mustard<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">2-3 tablespoons of olive oil<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">1-2 tablespoons of lemon juice<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">1 small shallot, finely chopped<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">1 tablespoon of capers, drained and chopped <\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">a handful of cornishons, chopped<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">salt <\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">pepper<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">a handful of chopped dill, tarragon, parsley, celery leaves (or you can just use dill)<\/span><\/li>\n<\/ul>\n<p class=\"p1\"><span class=\"s1\">Cook the potatoes in salted water until tender, about 20 minutes.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Drain and leave to cool down completely.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">In a bowl whisk together all the liquid sauce ingredients and season to taste.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Add the chopped herbs, cornishones, shallot and capers and stir well.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Toss the potatoes (cut in half if quite big) through the sauce, taste again and transfer into a large serving dish.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Decorate with a drizzle of olive oil, some black pepper and fresh herbs to hand.<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>This potato salad is a wonderful addition to any outdoor meal or a picnic.
