{"id":3740,"date":"2026-03-26T13:52:53","date_gmt":"2026-03-26T13:52:53","guid":{"rendered":"https:\/\/www.haimangiato.com\/?p=3740"},"modified":"2026-03-26T13:52:53","modified_gmt":"2026-03-26T13:52:53","slug":"polpettine-alle-olive-e-maggiorana-little-meatballs-with-olives-and-marjoram","status":"publish","type":"post","link":"https:\/\/www.haimangiato.com\/pl\/polpettine-alle-olive-e-maggiorana-little-meatballs-with-olives-and-marjoram\/","title":{"rendered":"Polpettine alle Olive e Maggiorana \/ Little Meatballs with Olives and Marjoram"},"content":{"rendered":"<p class=\"p1\"><strong><span class=\"s1\">For about 22 <em>polpettine<\/em>:<\/span><\/strong><\/p>\n<ul>\n<li class=\"p1\"><span class=\"s1\">500-600 g of minced beef, at room temperature<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">1 egg<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">1 tablespoon of breadcrumbs<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">120 g of green olives, weight after removing the stone (make sure that the olives are full of character, they don&#8217;t have to be expensive, but anything delicate will not work as well)<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">4 tablespoons of grated Parmigiano Reggiano<span class=\"Apple-converted-space\">\u00a0 <\/span>or Grana Padano cheese<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">a few pinches of dry marjoram (or fresh leaves picked from a few marjoram stems) <\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">salt<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">pepper<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">olive oil for frying, about 4 tablespoons<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">2 cloves of garlic, peeled (for frying only)<\/span><\/li>\n<\/ul>\n<p class=\"p1\"><span class=\"s1\">Place the ground beef in a large mixing bowl.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Roughly chop the drained olives and mix them with the meat.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Add the breadcrumbs, grated cheese, marjoram and season well with salt and pepper. <\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Mix very well using your hands adding one egg to bind the mix together.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Form small meatballs, about the size of a large walnut, and press them gently to flatten.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Warm up on medium-low heat the olive oil and two garlic cloves &#8211; lightly squashed.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Gradually add the meatballs into the pan and fry gently for about 5 minutes on each side, making sure not to burn the garlic. <\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Cover the pan with the lid and cook the <em>polpettine<\/em> until the meat is cooked through.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Decorate with fresh parsley moments before serving.<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>For about 22 polpettine: 500-600 g of minced beef, at room temperature 1 egg 1 tablespoon of breadcrumbs 120 g of green olives, weight after removing the stone (make sure that the olives are full of character, they don&#8217;t have to be expensive, but anything delicate will not work as well) 4 tablespoons of grated &hellip;
