Salty Feta cheese, sweet watermelon and fresh mint is already a happy marriage of the ingredients. But you can add a few more of them like capers for example, or cucumber, tomatoes, coarsely chopped pistachios, different herbs,<span class=\"Apple-converted-space\">\u00a0 <\/span>and play with different kinds of dressing.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">During hot summer months a generous portion of the Feta and watermelon salad served with hunks of crunchy bread and a glass of chilled Prosecoo will make for a perfect garden lunch or supper.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">I\u2019ll limit myself here just to the listing of the ingredients that I like to put together, so you can adjust their ratio to your liking:<\/span><\/p>\n<ul>\n<li class=\"p1\"><span class=\"s1\">ripe tomatoes, a few different varieties for contrast would be ideal (say sweet <em>Cuore di Bue<\/em> and anything that has a note of acidity)<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">ripe, sweet and very fresh watermelon, chilled, seeds removed<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">good quality Feta cheese, cubed or crumbled<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">capers in salt, soaked for one hour in cold water then drained<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">spring onion, thinly sliced<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">cucumber, chilled <\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">mint leaves<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">basil leaves<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">parsley leaves (optional)<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">salt<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">mild olive oil from Liguria or Lake Garda<\/span><\/li>\n<li class=\"p1\"><span class=\"s1\">lemon juice, be generous <\/span><\/li>\n<\/ul>\n<p class=\"p1\"><span class=\"s1\">Chop or slice and arrange neatly all the ingredients on a large serving plate.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Season everything with some salt, drizzle generously with the olive oil and lemon juice.
