This is a wonderfully aromatic, fresh and simple salad to make, especially when adding the best seasonal ripe tomatoes you can find.
You can enhance it with e few extra ingredients like: thinly sliced celery stalks or celery leaves, oregano or basil.
Ingredients:
Wash the zucchini and slice them thinly.
Put the sliced zucchini, tomatoes and mint into a bowl.
Season with some salt and pepper, drizzle with some olive oil and lemon juice, then toss well all the ingredients.
Taste and adjust the seasoning and/or dressing to your liking.
Eat immediately.
