*freshly squeezed lemon juice to drizzle on top of the finished dish
Heat 2-3 tablespoons of olive oil in a heavy based pan and gently fry the garlic (crashed with the back of the knife against the chopping board) until it gains a pale brown colour.
Now add the spinach and stir. It will wilt down very quickly and reduce in size.
That should just take a couple of minutes.
Now remove the spinach and drain of the excess water.
Melt the butter in a pan, add the raisins, pine nuts and the spinach. Stir for a couple of minutes until warm (but not over cooked) and add the seasoning to your taste.
Drizzle lemon juice on top and serve while still warm.
