Crunchy Carrot Salad

Serves 2:

  • 3-4 carrots, washed and peeled
  • some fresh parsley leaves, chopped
  • about two tablespoons of olive oil
  • some lemon juice to taste
  • a little bit of sugar
  • salt

Personally I like shave the carrots (using a potato peeler) for this salad, but you can grate them or thinly slice the carrots and then cut them again into matchsticks.

Whisk the olive oil, lemon juice, salt and sugar until well combined. Taste and adjust the seasoning, add more lemon juice if needed.

Pour the dressing over the prepared carrots, add the chopped parsley and toss well.

Serve immediately.
